Ganzhou Dried Bamboo Shoots and Fried Pork
Gànzhōu Sǔngān Chǎoròu is a beloved Ganzhou dish that stir-fries rehydrated dried bamboo shoots with sliced pork belly and fresh chili. The dried bamboo shoots have an intense, concentrated flavor and a chewy texture that pairs perfectly with the richness of pork. It is a classic Jiangxi home-style dish.
食材清单
- 150 g dried bamboo shoots (soaked overnight)
- 200 g pork belly (sliced thin)
- 3-4 fresh red chilies (sliced)
- 3 cloves garlic (minced)
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tsp cooking wine
制作步骤
- 1. Cut the pork into thin slices or small pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the pork and stir-fry quickly over high heat until it changes color.
- 4. Add bamboo shoots and ginger and continue to stir-fry until raw
- 5. Add soy sauce to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
