Jingdezhen dumpling cake
Jingdezhen Dumpling Cake is a signature snack of Jingdezhen, Jiangxi. Resembling oversized dumplings, they are made with a rice flour wrapper filled with shredded radish, diced tofu, and other ingredients, then steamed or pan-fried. The wrapper is thin and generous with filling, with a soft and chewy texture, making it one of Jingdezhen's favorite breakfast items.
Ingredients
- Rice noodles 300 g
- White radish 300 g
- Tofu 100 g
- Glass noodles 50 g
- Chili powder 5 g
- salt to taste
- cooking oil to taste
Instructions
- Heat rice flour and knead it into a dough, let it rest for 20 minutes
- Grate the white radish, add salt to kill the water and squeeze it dry
- Cut the tofu into small cubes, soak the vermicelli until soft and chop into small pieces
- Add shredded radish, diced tofu, chopped vermicelli, salt and chili powder and mix well to make filling
- Divide the dough into small portions and roll into rounds
- Wrap in the filling, fold in half and pinch the edges
- Brush the pan with oil, add the dumplings and fry until golden brown on both sides
- You can also steam it for 10 minutes for a softer and more chewy texture.
Cultural Notes
Jingdezhen dumpling cake is a traditional snack unique to the porcelain capital and has as long a history as Jingdezhen’s porcelain. The locals say that 'you haven't been to Jingdezhen if you haven't eaten dumpling cakes', which shows its status in the hearts of the locals.
