Cooking Steps

  1. Boil the thick rice noodles in cold water until soft (about 15 minutes)
  2. Drain the cold water and place in a bowl
  3. Dice the mustard and cut the orange peel into thin strips
  4. Add mustard dices, orange peel shreds, and minced garlic in sequence.
  5. Add chili sauce, light soy sauce, vinegar and sesame oil
  6. Sprinkle with chopped green onion, mix well and serve

Cultural Note

The unique thing about Jingdezhen cold rice noodles is that the vermicelli is much thicker than ordinary rice noodles and has a chewier texture. Tangerine peel is the soul condiment of cold noodles.
