Jiangxi Nanchang Banfen
Nánchāng Bànfěn is Nanchang's iconic street food. Thin rice noodles are tossed with a savory sauce of soy sauce, chili oil, sesame oil, and peanuts, then topped with minced pork, pickled vegetables, and fresh scallions. Every Nanchang local starts their day with a bowl.

- 200 g thin rice noodles
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sesame oil
- 1 tbsp chili oil
- 1 tbsp chopped peanuts
- 30 g minced pork (cooked)
- 20 g pickled mustard greens
- 2 scallions (chopped)
- 1/2 tsp sugar
- White pepper
制作步骤
- 1. Wash and process the mixed powder.
- 2. Add water to the pot and bring to a boil, add Nanchang flour and blanch until cooked, then add cold water
- 3. Drain the Nanchang mixing powder and put it into a large bowl
- 4. Add minced garlic, coriander and other garnishes and seasonings
- 5. Add soy sauce, salt, sugar and other seasonings and mix well
- 6. Plate and serve
