Pingxiang Fried Noodles
Pingxiang Fried Noodles is a specialty noodle dish from Pingxiang, Jiangxi. Made with handmade noodles stir-fried over high heat with pork, bean sprouts, and leafy greens. The noodles are firm and chewy with excellent wok hei (breath of the wok), making it a beloved daily staple in Pingxiang.

- Handmade noodles 300 g
- Pork 100 g
- Bean sprouts 100 g
- Bok choy 100 g
- Eggs 2 pcs
- Scallions and ginger 10 g each
- Soy sauce 20 ml
- Dark soy sauce 5 ml
- salt to taste

制作步骤
- Boil the noodles until they are medium-cooked, remove from the cold water and drain
- Shred the pork, cut the vegetables into sections, and shred the green onions and ginger.
- Beat the eggs, stir-fry and serve
- Put oil in the pot, add shredded pork and fry until it changes color
- Add onion and ginger and saute until fragrant
- Add bean sprouts and green vegetables and stir-fry
- Add noodles and eggs, pour in soy sauce and dark soy sauce
- Stir quickly over high heat and add salt to taste.
