Pingxiang Fried Noodles is a specialty noodle dish from Pingxiang, Jiangxi. Made with handmade noodles stir-fried over high heat with pork, bean sprouts, and leafy greens. The noodles are firm and chewy with excellent wok hei (breath of the wok), making it a beloved daily staple in Pingxiang.

  1. Boil the noodles until they are medium-cooked, remove from the cold water and drain
  2. Shred the pork, cut the vegetables into sections, and shred the green onions and ginger.
  3. Beat the eggs, stir-fry and serve
  4. Put oil in the pot, add shredded pork and fry until it changes color
  5. Add onion and ginger and saute until fragrant
  6. Add bean sprouts and green vegetables and stir-fry
  7. Add noodles and eggs, pour in soy sauce and dark soy sauce
  8. Stir quickly over high heat and add salt to taste.
