Pingxiang Fried Chicken
Píngxiāng Chǎojī (Pingxiang Stir-fried Chicken) is a fiery, aromatic chicken dish from Pingxiang, Jiangxi. Free-range chicken is cut into small pieces and stir-fried with generous amounts of fresh chili, garlic, and ginger. Pingxiang cuisine is known as some of the spiciest in Jiangxi, and this dish showcases that reputation with its bold, numbing heat.
食材清单
- 500 g free-range chicken (cut into small pieces)
- 10-15 fresh green and red chilies
- 5 cloves garlic (minced)
- 1 thumb-sized piece of ginger (sliced)
- 3 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp cooking wine
- 1 tsp sugar
制作步骤
- 1. Wash and cut Pingxiang fried chicken, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Pingxiang fried chicken piece by piece, fry over medium heat until golden brown, take out
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
