Yichun Zhafen
Yichun Bamboo-Tied Noodles is a traditional specialty of Yichun, Jiangxi, named for the practice of tying handmade rice noodles into bundles. The noodles are flexible and springy, stir-fried or tossed with shredded pork, bean sprouts, and chili peppers. With its unique texture, it is a local delicacy that Yichun residents take great pride in.
Ingredients
- Yichun bamboo-tied noodles 300 g
- Pork 80 g
- Bean sprouts 100 g
- Green chili pepper 30 g
- Dried chili peppers 5 pcs
- Garlic 10 g
- Light soy sauce 15 ml
- salt to taste
- cooking oil to taste
Instructions
- Soak the powder in warm water until soft (about 30 minutes)
- Shred the pork, cut the pepper into sections, and slice the garlic
- Put oil in the pot, add shredded pork and fry until it changes color
- Add garlic slices and dried chili pepper and sauté until fragrant
- Add bean sprouts and green chilies and stir-fry
- Add the soaked powder
- Add light soy sauce and salt to taste
- Stir-fry over high heat until the vermicelli is fragrant.
Cultural Notes
Yichun Zhafen has a history of hundreds of years and is the most representative local snack in Yichun. The production process of Yichun Zhafen is unique. The vermicelli needs to be rolled by hand and tied into bundles to dry, so it is called 'Zhafen'. The taste is significantly different from other rice noodles, more flexible and chewy.
