Homestyle chicken
Jiācháng Dàpánjī is the home-style version of Xinjiang's Big Plate Chicken. This simpler, everyday version uses fewer spices and is more accessible for home cooking, while still capturing the essence of the dish — tender chicken, soft potatoes, and wide noodles in a rich, satisfying sauce.

- 600 g chicken (cut into pieces)
- 2 potatoes (cut into wedges)
- 2 tbsp chili oil
- 5 dried red chilies
- 2 star anise
- 3 cloves garlic
- 2 slices ginger
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 400 ml water
- 200 g wide flat noodles
- 1 bell pepper (cut into strips)
- Scallions
制作步骤
- 1. Wash and cut the chicken into pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the chicken and stir-fry quickly over high heat until it changes color.
- 4. Add potatoes and green peppers and continue to stir-fry until cooked through
- 5. Add appropriate amount of salt and a little soy sauce to enhance the freshness, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate

While restaurant-style Big Plate Chicken is elaborate, every Xinjiang family has their own simpler home version. The home-style version is less spicy and more accessible, designed for everyday family dining. It still must include the wide flat noodles, which everyone agrees are the best part.
