Xinjiang Chicken
Ingredients
- 1 whole chicken (cut into large pieces, about 1.2 kg)
- 3 large potatoes (cut into wedges)
- 3 tbsp chili oil
- 10 dried red chilies
- 1 tsp Sichuan peppercorn
- 3 star anise
- 1 stick cinnamon
- 4 cloves garlic
- 3 slices ginger
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 500 ml water
- Wide flat noodles (ban mian)
- Bell peppers (cut into strips)
- Scallions

- Wash and cut the chicken into pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
