Teochew beef offal rice cake
Cháoshán Niúzá Guǒtiáo is a beloved Chaoshan street food. Flat rice noodles (kway teow) are served in a rich, clear beef broth loaded with various beef offal — tripe, tendon, and meat slices. The broth is simmered for hours with beef bones and star anise, creating a deeply satisfying comfort food.

- 200 g flat rice noodles (kway teow)
- 200 g beef offal (tripe, tendon, brisket)
- 1 liter beef bone broth
- 2 tbsp light soy sauce
- 1 tbsp fish sauce
- 1 star anise
- 2 slices ginger
- Cilantro
- Pickled mustard greens
- Chili oil
- White pepper
制作步骤
- 1. Wash and process beef offal
- 2. Add enough water to the pot, add Chaoshan beef offal rice noodles and ginger slices
- 3. After the fire is boiled, skim off the foam.
- 4. Add glutinous rice flour and simmer over low heat for 1 hour
- 5. Add salt to taste
- 6. Serve in a bowl and sprinkle with chopped green onion.
