Chaoshan pig trotters
Cháoshán Zhūjiǎo Quān is a popular Chaoshan street snack. It is a deep-fried ring-shaped fritter made from a batter of rice flour and sweet potato flour, studded with diced taro, green beans, and dried shrimp. Crispy on the outside and chewy inside, it is sold fresh from street wok vendors.
食材清单
- 100 g rice flour
- 50 g sweet potato flour
- 1 cup water
- 100 g taro (diced small)
- 50 g green beans
- 30 g dried shrimp (soaked and chopped)
- 1/4 tsp salt
- Oil for deep frying
制作步骤
- 1. Slice the pig against the grain, add cooking wine, soy sauce and starch, mix well and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the pig and stir-fry quickly over high heat until it changes color.
- 4. Add soybeans and ginger and continue to stir-fry until raw
- 5. Add star anise, soy sauce and rock sugar to taste, stir-fry over high heat and remove from the pan
- 6. Remove from the pan and serve on a plate
