Chaoshan Ganlancai
Chaoshan olive vegetables are a distinctive condiment made from Chinese olives and mustard greens, slowly cooked with oil until deeply savory and complex.
食材清单
- Chaoshan preserved olives 1 tbsp
- Cooking oil to taste
- Salt to taste
- Soy sauce 1 tbsp
- Cooking wine 1 tbsp
- Scallions, ginger and garlic to taste
制作步骤
- 1. Wash and chop the olives, add salt and marinate to remove the water.
- 2. Add oil to the pot and sauté the minced garlic and chili over low heat.
- 3. Add olives and stir-fry
- 4. Add soy sauce and sugar to taste
- 5. Stir-fry over low heat for 15-20 minutes until the flavor becomes fragrant.
- 6. Allow to cool, then put into cans, ready to use

Ganlancai is one of the most iconic condiments of Chaoshan cuisine, and a jar is found in virtually every Chaoshan household. Despite its name, it is not made from Mediterranean olives but from Chinese olives (Canarium album), a native fruit that is unrelated to the olive family. The combination of Chinese olives and mustard greens, slow-cooked in generous amounts of peanut oil, creates a deeply savory, complex condiment with a distinctive aroma. Ganlancai is one of the "three treasures of Chaoshan seasonings" along with fish sauce and fermented bean paste.
