Teochew Braised Goose Feet Noodles
Cháozhōu Lǔ É Jiǎo Miàn features braised goose feet served over noodles. The goose feet are braised in the famous Chaozhou master stock (lu shui) — a complex soy-based braising liquid infused with star anise, cinnamon, garlic, and dried tangerine peel. The result is deeply flavorful, tender yet gelatinous goose feet.

- 6-8 goose feet
- 200 g egg noodles
- Chaozhou master stock (lu shui): 500 ml soy sauce
- Master stock: 3 star anise
- Master stock: 1 stick cinnamon
- Master stock: 5 cloves garlic
- Master stock: 2 pieces dried tangerine peel (chenpi)
- Master stock: 2 tbsp rock sugar
- Master stock: 500 ml water
- Bok choy
- Scallions
- Sesame oil
制作步骤
- 1. Wash and cut the Teochew braised goose feet into pieces, blanch them in water to remove the blood foam and set aside.
- 2. Heat oil in a pot and sauté onions, ginger and garlic.
- 3. Add in Chaozhou Braised Goose Feet Noodles and fry until the surface is slightly brown.
- 4. Add green onions, ginger slices, appropriate seasonings and appropriate amount of hot water
- 5. Bring to a boil, then turn to low heat and simmer for 40-60 minutes
- 6. Add salt and pepper, reduce the juice over high heat, and serve.
