Chaoshan Zha Doufu
Chaoshan fried tofu features cubes of soft tofu coated in a light batter and deep-fried until golden and crispy outside while remaining silky inside. Served with a garlic-cilantro vinegar dipping sauce, it is a beloved street food and temple fair snack in the Chaoshan region.

- Tofu 500 g
- Starch 100 g
- Cooking oil 500 ml
- Salt to taste
- Cooking wine 1 tbsp
- Eggs 1 pcs
制作步骤
- 1. Wash and cut Chaoshan fried tofu, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Chaoshan fried tofu piece by piece, fry over medium heat until golden brown, take out
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
