Oyster Pancake
Chaoshan oyster omelette is a beloved street food featuring fresh oysters cooked with eggs and sweet potato starch batter until crispy on the outside and tender inside.
Ingredients
- Oyster 300 g
- Eggs 3 pcs
- Sweet potato starch 50 g
Instructions
- 1. Beat the eggs and add a little salt and mix well
- 2. Heat a little oil in a pan and pour in the egg liquid
- 3. Fry over low heat until the egg liquid solidifies and the bottom is slightly charred, flip over and fry until both sides are golden brown.
- 4. Remove from the pan and serve with soy sauce or tomato sauce.
Cultural Notes
Oyster omelette (haolao) is one of the most iconic street foods of the Chaoshan region. The version here differs from the Xiamen/Fujian version in its use of larger oysters and a different batter ratio. In Shantou, the best oyster omelettes are found in small stalls near the old harbor, where the oysters are brought in fresh from the sea each morning. The sweet potato starch batter creates a distinctive crispy-chewy texture that regular flour cannot replicate.
