Teochew style tea smoked shrimp
Cháoshì Chá Xūn Xiā is a unique Chaoshan preparation where large shrimp are smoked over a mixture of tea leaves, rice, and sugar. The smoking process imparts a delicate tea aroma while keeping the shrimp juicy and sweet. It is an impressive appetizer that showcases Chaoshan's creative cooking techniques.
食材清单
- 500 g large shrimp (shell on)
- 20 g tea leaves (oolong or tieguanyin)
- 2 tbsp raw rice
- 2 tbsp sugar
- 1 tbsp star anise pieces
- 1 stick cinnamon
- Aluminum foil
- 1 tbsp sesame oil
- 1 lemon (cut into wedges)
制作步骤
- 1. Wash the shrimps, marinate them with seasonings for 30 minutes
- 2. Line a baking sheet with tin foil and add Teochew tea smoked shrimps
- 3. Preheat the oven to 200 degrees
- 4. Place in the middle rack of the oven and bake for 20-25 minutes
- 5. Take it out halfway and brush it with a layer of marinade.
- 6. Bake until the surface is golden brown and then take it out of the oven
