Chángzhì Dāoxiāo Miàn (Changzhi Knife-Cut Noodles) is a Shanxi noodle specialty where dough is shaved directly into boiling water using a special knife, creating noodles with a distinctive irregular shape — thick in the middle and thin at the edges. This shape gives each noodle a unique texture, with a satisfying chewiness that holds sauce beautifully.

- Noodles: 400 g flour, 180 ml water, 2 g salt
