Linfen beef noodles
Ingredients
- Noodles: 300 g high-gluten flour, 150 ml water, 2 g salt, 5 g alkali
- Broth: 500 g beef shank, 1 beef bone
- Broth: 3 slices ginger, 2 scallions, 1 star anise, 1 cinnamon stick
- Broth: 2 tbsp soy sauce, 1 tbsp dark soy sauce
- Topping: sliced braised beef, blanched bok choy
- Topping: cilantro, chili oil, white pepper
Instructions
- Add flour and water and mix into a smooth dough, let it rest for 30 minutes
