Shanxi Braised Pork Noodles
Shanxi knife-cut noodles with braised meat topping is the most iconic dish of Shanxi, featuring hand-shaved noodles with irregular edges served with a rich, savory meat sauce.

- Flour 500 g
- Tomato 2 pcs
- Cooking oil to taste
- Soy sauce 2 tbsp
- Cooking wine 2 tbsp
- Ginger slices 3 slices
- Scallion segments 2 stalk
- Salt to taste
制作步骤
- 1. Wash Shanxi shaved noodles with marinade and cut into pieces, blanch in water to remove blood foam and set aside
- 2. Heat oil in a pot and sauté onions, ginger and garlic.
- 3. Add Shanxi noodles and fry until the surface is slightly brown.
- 4. Add flour, tomatoes, ginger slices, green onions and appropriate amount of hot water
- 5. Bring to a boil, then turn to low heat and simmer for 40-60 minutes
- 6. Add salt and pepper, reduce the juice over high heat, and serve.

Daoxiaomian (knife-cut noodles) is the single most famous food of Shanxi province. The technique of shaving noodles directly from a block of dough into boiling water requires years of practice and remarkable knife skills. Master noodle shavers can produce hundreds of noodles per minute with astonishing consistency. The noodles have a distinctive irregular shape — thick in the middle and thin at the edges — which creates a perfect combination of chewy and tender textures. Shanxi people say that knife-cut noodles are to Shanxi what pasta is to Italy. The dish is served with various toppings, but the braised meat sauce (lu) is the most traditional.
