Oat Flour Kaolaolao is a traditional noodle dish from the Xinzhou region of Shanxi. Made from oat flour that is hand-rolled into cylindrical shapes and steamed, it resembles a honeycomb in appearance. Chewy and satisfying, it is served with lamb sauce or pickled greens soup. It is a representative masterpiece of Shanxi noodle culture.

  1. Pour the oatmeal noodles into a basin and stir into a dough while pouring in boiling water.
  2. Knead the dough while it is hot until smooth and divide into small portions
  3. Take a dollop and roll it into thin oval slices in the palm of your hand.
  4. Roll into a cylinder on a chopping board or your fingers
  5. Place them in the steamer one by one
  6. Steam over high heat for 10-12 minutes until cooked
  7. Serve with mutton confit or pickled cabbage soup for dipping
