Changzhi fried pork
Chángzhì Chǎo Zhūròu is a home-style stir-fried pork dish from Changzhi in southeastern Shanxi. Thinly sliced pork belly is stir-fried with local vegetables and seasonings, creating a simple but deeply satisfying dish. It exemplifies the robust, hearty cooking style of southern Shanxi.
食材清单
- 300 g pork belly (thinly sliced)
- 150 g green peppers (sliced)
- 100 g potato (thinly sliced)
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp vinegar
- 1 tsp sugar
- 3 cloves garlic (minced)
- 2 scallions
制作步骤
- 1. Wash and cut Changzhi stir-fried pork, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Changzhi stir-fried pork piece by piece and fry over medium heat until golden brown and take out.
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
