Datong fried tofu noodles
Dàtóng Zhà Dòufu Miàn (Datong Fried Tofu Noodles) is a Datong specialty combining handmade noodles with crispy fried tofu in a savory broth. The tofu is deep-fried until golden and then simmered in the broth, creating a dish where the tofu absorbs the soup while maintaining a crispy exterior. It is a beloved Datong street food and comfort meal.
食材清单
- Noodles: 300 g flour, 150 ml water, 2 g salt
- Tofu: 300 g firm tofu (cut into cubes)
- Oil for deep-frying
- Broth: 500 ml pork or chicken stock
- Broth: 2 tbsp soy sauce, 1 tbsp dark soy sauce
- Broth: 1 tsp five-spice powder, 3 slices ginger
- Topping: scallions, cilantro, chili oil
制作步骤
- 1. Wash and cut Datong fried tofu noodles, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Datong fried tofu noodles piece by piece, fry over medium heat until golden brown, take out
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
