Pingyao Niurou
Pingyao beef is a famous preserved beef from the ancient walled city of Pingyao. Salted, pressed, and slow-cooked until deeply flavored.

- Beef 300 g
- Cooking oil to taste
- Salt to taste
- Soy sauce 1 tbsp
- Scallions, ginger and garlic to taste
- Cooking wine 1 tbsp
制作步骤
- 1. Slice the beef against the grain, add cooking wine, soy sauce and starch, mix well and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add beef and stir-fry quickly over high heat until it changes color.
- 4. Add onion, ginger and garlic and continue to stir-fry until cooked through
- 5. Add salt, soy sauce and cooking wine to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate

Pingyao beef has been produced in the UNESCO World Heritage city of Pingyao for over 300 years. During the Qing dynasty, Pingyao merchants carried it across China as a premium gift. The production method involves salting for several days, then very slow cooking. The pressing step gives the beef a dense, firm texture. It is the most popular souvenir for visitors to Pingyao.
