Daoxiao Mian (Knife-Cut Noodles) are Shanxi Province's most iconic dish — thick, irregularly shaped noodles shaved directly from a block of dough into boiling water using a special knife. Each noodle has a distinct shape and texture, with a slightly thicker middle that gives a satisfying chewy bite.

Daoxiao Mian is the symbol of Shanxi's reputation as the 'Noodle Capital of China.' Shanxi people are said to have over 300 types of noodles, but dao xiao mian reigns supreme. Watching a skilled noodle master shave noodles at lightning speed is a performance art. The technique dates back over 1,000 years and was reportedly invented by a cook for Emperor Kangxi.
