Shanxi noodles
Shānxī Yóumiàn Kǎolǎolǎo (Shanxi Oat Noodle Rolls) are a traditional Shanxi dish made from oat flour (youmian). The dough is rolled into thin sheets and then coiled into small cylindrical shapes, resembling honeycombs. Steamed and served with savory toppings, these noodle rolls have a distinctive chewy texture and nutty oat flavor.

- 300 g oat flour (youmian)
- 150 ml boiling water
- Topping: 200 g minced lamb or pork
- Topping: 2 tbsp soy sauce, 1 tbsp vinegar
- Topping: 1 tbsp chili oil, 3 scallions (minced)

制作步骤
- Pour boiling water over oat flour gradually, stirring with chopsticks to form a coarse dough.
- Knead while hot until smooth and elastic. Rest 15 minutes.
- Take a small piece, roll into a thin oval on a cutting board.
- Wrap around your fingers or a rolling pin to form a hollow cylinder.
- Arrange standing up in a steamer. Steam over high heat for 12-15 minutes.
- Mix toppings together. Serve noodle rolls with toppings spooned over.
