Ingredients

  • Rice noodles 250g
  • Ground pork 100g
  • Tomato 1 (diced)
  • Bok choy 100g
  • Scallions 2 (chopped)
  • Garlic 3 cloves (minced)
  • Light soy sauce 1 tbsp
  • Shaoxing wine 1 tsp
  • Salt 1/2 tsp
  • Cooking oil 2 tbsp

Instructions

  1. 1. Soak rice noodles in warm water until soft. Drain.
  2. 2. Heat oil, stir-fry ground pork until crispy.
  3. 3. Add garlic and tomato. Cook until tomato softens.
  4. 4. Add soy sauce, Shaoxing wine and a cup of water.
  5. 5. Bring to boil. Season with salt.
  6. 6. Add bok choy. Cook 1 minute.
  7. 7. Cook rice noodles in boiling water for 1 minute.
  8. 8. Drain noodles. Ladle sauce and pork over noodles. Top with scallions.
