Dali bait block
Dali Erkuai (Rice Cake) is a traditional staple food of the Bai people in Dali, Yunnan. Made by steaming glutinous rice and then pounding it into a dense cake. Erkuai can be stir-fried, boiled, or grilled, with stir-fried erkuai being the most classic. Tossed with pickled greens, minced meat, and Chinese chives, it is soft, chewy, and springy — a unique delicacy found only in Yunnan.

- Pickled mustard greens 50 g
- Chinese chives 50 g
- Bean sprouts 50 g
- Chili paste 15 g
- Soy sauce 10 ml

制作步骤
- Bait cubes cut into thin slices
- Cut leeks into sections and chop sauerkraut.
- Put oil in the pot and stir-fry the minced meat
- Add chili sauce and sauerkraut and stir-fry until fragrant
- Add the bait pieces and stir-fry until soft
- Add bean sprouts and leek segments
- Add soy sauce and salt to taste
- Stir-fry evenly until the bait pieces are fragrant.

Bait cubes are a unique food in Yunnan, and Dali is an important production area of bait cubes. The Bai people call the bait block 'bait feed', and they must make it during every year and festival.
