Yunnan Shiping Doufu
Shiping tofu from Yunnan is a famous artisanal tofu made with natural spring water, known for its delicate texture and ability to be grilled without breaking apart.

- Shiping tofu 2 pieces (about 300g each)
- Ginger 10g (sliced)
- Scallions 3
- Garlic 3 cloves (minced)
- Fermented chili paste 2 tbsp
- Light soy sauce 1 tbsp
- Chili oil 1 tbsp
- Coriander for garnish
- Salt 1/4 tsp
制作步骤
- 1. Cut Shiping tofu into triangles.
- 2. Heat oil, pan-fry tofu until golden on both sides.
- 3. Remove tofu.
- 4. Leave some oil. Stir-fry garlic and fermented chili paste.
- 5. Add a cup of water, soy sauce and salt.
- 6. Return tofu. Simmer 5 minutes.
- 7. Transfer to plate.
- 8. Drizzle chili oil. Garnish with scallions and coriander.
