Instructions
- 1. Cut potatoes into thick pieces.
- 2. Heat oil and fry potato cubes until crispy on the outside and tender on the inside.
- 3. Remove potatoes. Leave 1 tbsp oil.
- 4. Add dried chilies and Sichuan peppercorns.
- 5. Add garlic.
- 6. Return the potatoes. Sprinkle with paprika and cumin.
- 7. Add soy sauce and salt.
- 8. Stir evenly. Garnish with scallions. Serve immediately.
