Yunnan old milk potato
Yunnan Grandma's Potato is one of the most classic home-style dishes in Yunnan. Potatoes are steamed, mashed, and stir-fried with chili and Sichuan peppercorns. The texture is silky soft and delicate, spicy and appetizing. It gets its name because the potatoes are so soft that even a toothless grandma can enjoy them.

- Potato 500 g
- Dried chili peppers 5 pcs
- Sichuan peppercorns 5 g
- Chopped scallions 20 g
- Minced garlic 10 g
- salt to taste
- cooking oil to taste
制作步骤
- Peel and cut potatoes into cubes, steam for 20 minutes until soft.
- Take it out and mash it into fine mashed potatoes while it's still hot.
- Put oil in the pot and sauté the Sichuan peppercorns and dried chilies over low heat.
- Add minced garlic and sauté until fragrant
- Pour in mashed potatoes and stir-fry
- Add salt to taste and stir-fry until the mashed potatoes are slightly dry.
- Sprinkle with chopped green onion and serve
