Instructions
- 1. Cut the beef into thin slices. Marinate with soy sauce, Shaoxing wine and cornstarch for 15 minutes.
- 2. Wash the mint leaves and pat dry.
- 3. Heat oil until very hot.
- 4. Quick-fry beef 30 seconds. Remove.
- 5. Add garlic, ginger and dried chilies.
- 6. Return beef. Add salt.
- 7. Add mint leaves last. Toss quickly.
- 8. Eat the mint immediately while it is still bright and fragrant.
