Yunnan Pineapple Rice
Instructions
- 1. Soak glutinous rice overnight. Steam 25 minutes.
- 2. Cut pineapple in half lengthwise. Scoop out flesh. Dice.
- 3. Soak raisins and longan in warm water until soft.
- 4. Mix the steamed rice with diced pineapple, raisins, longan, sugar and butter.
- 5. Add a little salt to taste.
- 6. Fill the pineapple shell with the mixture.
- 7. Cover with foil.
- 8. Steam for 15 minutes. The rice absorbs the aroma of the pineapple. Eat in the shell.
