About Pineapple Rice
Fragrant sticky rice steamed inside a fresh pineapple with sweet glutinous rice, raisins, and various fruits. A signature Dai ethnic dish from Xishuangbanna, served in the pineapple shell for a stunning presentation.
Ingredients
- Glutinous rice 250g (soaked)
- Pineapple 1 (medium)
- Raisins 30g
- Dried longan 20g
- Sugar 2 tbsp
- Butter 1 tbsp
- Salt 1/4 tsp
Instructions
- 1. Soak glutinous rice overnight. Steam 25 minutes.
- 2. Cut pineapple in half lengthwise. Scoop out flesh. Dice.
- 3. Soak raisins and longan in warm water.
- 4. Mix steamed rice with diced pineapple, raisins, longan, sugar and butter.
- 5. Season with a pinch of salt.
- 6. Stuff mixture back into pineapple shells.
- 7. Cover with foil.
- 8. Steam 15 minutes. The rice absorbs pineapple fragrance. Serve in the shell.
