Qujing rotten powder
Qujing Lanfen (Soft Noodle Soup) is a specialty snack from Qujing, Yunnan. Made with sweet potato glass noodles as the main ingredient, the noodles are cooked until soft and melting. The broth is thick and rich, served with minced meat, pickled greens, and chili. Tangy, spicy, and appetite-stimulating, it is the most beloved winter comfort food in Qujing.

- Sweet potato glass noodles 200 g
- Ground pork 80 g
- Pickled mustard greens 50 g
- Tofu 100 g
- Chili oil 15 ml
- Sichuan peppercorn oil 5 ml
- Chopped scallions to taste

- Stock 500 ml
制作步骤
- Soak sweet potato vermicelli in advance
- Chop sauerkraut and cut tofu into cubes
- Put the stock into the pot and bring to a boil
- Add minced pork and stir to combine
- Add sauerkraut and tofu
- Add vermicelli and cook until soft
- Add salt, chili oil, and pepper oil to taste
- Sprinkle with chopped green onions
