Soft, jelly-like tofu made from rice starch, served cold with a spicy-sour dressing of chili oil, soy sauce, vinegar, and topped with peanuts and fresh herbs. A beloved Yunnan street snack with a unique silky texture.

Ingredients

  • Rice 500g
  • Water 1.5L
  • Salt 1 tsp
  • Soy sauce dip: light soy sauce 2 tbsp, vinegar 1 tbsp, chili oil 1 tsp, garlic 2 cloves (minced), scallions 2

Instructions

  1. 1. Soak rice for 4 hours.
  2. 2. Grind soaked rice with water into a smooth batter.
  3. 3. Strain batter through fine sieve.
  4. 4. Pour thin layer of batter into a greased shallow pan.
  5. 5. Steam over high heat 3 minutes until set.
  6. 6. Remove and let cool slightly. Cut into strips or squares.
  7. 7. Serve with soy sauce dip, garlic, vinegar and chili oil.
  8. 8. Can also be stir-fried with vegetables and meat.
